These easy weeknight nachos are my go-to when I don’t want to overthink dinner. I’ve been making them for years, and they are always a hit. They’re easy, universally appealing, and everyone can customize them with their own toppings. Even better? I almost always have everything I need either in my freezer or my pantry.

INGREDIENTS

  • 1 lb. lean ground beef
  • 1 T Montreal steak seasoning
  • 1 1/2 T ground cumin
  • 3 T chili powder (Mexene is my personal favorite)
  • 1 (14.5 oz) can petite diced tomatoes in basil, oregano, and olive oil
  • 1 cube Dorot Gardens crushed garlic (or equivalent to 1 clove garlic)
  • 1 (12 oz) pkg. frozen corn
  • 1/2 cup chicken stock
  • Optional toppings: avocado, diced tomatoes, sliced jalapeños, shredded cheese, queso, guacamole

INSTRUCTIONS

  • In large stockpot, brown ground beef.
  • Sprinkle with steak seasoning and cumin. Continuing to brown until cooked through.
  • Add chili powder, stirring to combine.
  • Add tomatoes, garlic, corn, and chicken stock, stirring to combine.
  • Reduce heat and simmer 15 minutes.
  • Serve over tortilla chips or steamed rice and desired toppings.
